  • (12 oz.) turkey breakfast sausage
  • (2 cups) 1% low-fat milk
  • (2 cups) egg substitute
  • (1 tsp.) dry mustard
  • (3/4 tsp.) salt
  • (1/2 tsp.) freshly ground black pepper
  • (1/4 tsp.) ground red pepper
  • (3 large) eggs
  • (16 slices) white bread, crusts removed, cut into 1 in. cubes
  • (1 cup) reduced-fat extra sharp cheddar cheese, finely shredded
  • (1/4 tsp.) paprika



Hearty Breakfast Casserole

Cubed white bread tossed with hearty sausage and sharp cheddar cheese in a tangy custard.

  1. 1Spray a 13 x 9 baking dish with cooking spray. Also spray a large nonstick skillet with cooking spray and place over medium-high heat.
  2. 2Add sausage, breaking it up with a wooden spoon. Cook 5 minutes or until browned, drain and remove pan from heat.
  3. 3In a large bowl, whisk together milk, egg substitute, dry mustard, salt, pepper and eggs. Stir in cooled sausage, bread and cheddar cheese.
  4. 4Pour into baking dish, cover and refrigerate at least 8 hours, up to overnight.
  5. 5When ready to cook, let casserole sit out at room temperature for 30 minutes. Preheat oven to 350°F.
  6. 6Sprinkle paprika over casserole and bake 45 minutes or until set. Let cool 10 minutes and serve.
