  • (1/2 cup) fat-free vanilla yogurt
  • (3 large) egg whites
  • (1/2 cup) granular sugar substitute
  • (1 cup) canned pumpkin
  • (2 Tbsp.) walnuts, finely chopped

  1. 1Preheat the oven to 350°F. Spray a mini-muffin pan with I Can’t Believe It’s Not Butter! spray.
  2. 2In a medium bowl, combine the flour, pumpkin pie spice, cinnamon, baking soda, baking powder and salt.
  3. 3In a large bowl, whisk together the yogurt and egg whites. Stir in the sugar substitute and pumpkin.
  4. 4Gradually add the flour mixture, stirring after each addition.
  5. 5Fill each muffin cup about 2/3 full, sprinkle walnuts on top.
  6. 6Bake 25 to 30 minutes or until golden brown. Let cool and serve.
