  • (2 cups) egg substitute
  • (1/2 cup) fat-free milk
  • (1/4 tsp.) salt
  • (1/4 tsp.) black pepper
  • (2/3 cup) ham, diced
  • (1/2 cup) orange bell pepper, diced
  • (1/2 cup) green onions, thinly sliced
  • (1/4 cup) reduced-fat shredded cheddar cheese



Ham and Cheese Frittata

Diced ham and cheddar cheese in a fluffy egg frittata with sweet bell pepper and crunchy green onions.

  1. 1Preheat oven to 375°. Spray a medium nonstick skillet with cooking spray and place over medium-high heat.
  2. 2Add ham, bell pepper and onions to pan. Saute 2 minutes. In a small bowl, whisk together egg substitute, milk, salt and pepper. Add to pan and cook on medium 5 minutes, stirring for the first 2 minutes.
  3. 3Add cheese. Wrap foil around the handle of the pan and bake 12 minutes, or until set. Cut and serve.
