  • (4 large) egg whites
  • (4 large) eggs
  • (1 cup) skim milk
  • (2 Tbsp.) Dijon mustard
  • (1/4 tsp.) freshly ground pepper
  • (1 tsp.) fresh rosemary, minced
  • (4 cups) whole-grain bread, crusts removed if desired and cut into 1-inch cubes
  • (5 cups) chopped spinach, wilted
  • (1/2 cup) jarred roasted red peppers, chopped
  • (1 cup) diced ham steak
  • (3/4 cup) shredded Gruyère cheese



Ham and Cheese Bread Pudding

Rustic whole-grain bread tossed with ham, shredded cheese and vegetables, then baked with a Dijon rosemary custard.

  1. 1Preheat oven to 375°F. Spray an 11×7 in. glass baking dish with cooking spray.
  2. 2In a medium bowl, whisk together egg whites, eggs, milk, mustard, pepper and rosemary. In a large bowl, combine bread, spinach, red peppers and ham. Toss with custard.
  3. 3Pour into baking dish, press down slightly. Cover and bake 40-45 minutes. Add cheese on top and bake another 15-20 minutes, uncovered.
  4. 4Cool 15-20 minutes and serve.
