• (1 tsp.) instant espresso-coffee powder
  • (1 tsp.) hot water
  • (3/4 cup) all-purpose flour
  • (1/2 cup) unsweetened cocoa
  • (1/2 tsp.) baking powder
  • (1/4 tsp.) salt
  • (3 Tbsp.) margarine or butter
  • (3/4 cup) sugar
  • (1/4 cup) dark corn syrup
  • (1 tsp.) vanilla extract
  • (2 large) egg whites



Guiltless Fudge Brownies

  1. 1Preheat oven to 350°F. Spray an 8×8 in. metal baking pan with cooking spray.
  2. 2Place espresso powder in a small bowl, pour in hot water, stir and set aside.
  3. 3Place a 2 quart saucepan over low heat. Add margarine. When melted, take off heat and whisk in sugar, corn syrup, vanilla extract, egg whites and dissolved espresso.
  4. 4Whisk together flour, cocoa, baking powder and salt in a large bowl. Add sugar mixture, stir to combine. Pour into greased pan.
  5. 5Bake 18-22 minutes, or until fudgey. Cool on wire rack and serve.
