• (14 oz. bag) frozen broccoli, cooked and drained
  • (1 Tbsp.) butter or trans-free margarine
  • 1/4 cup finely chopped onion
  • 1 tablespoon flour
  • 2 cups fat-free reduced-sodium chicken broth
  • 1 cup fat-free evaporated milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded reduced-fat sharp cheddar cheese



Guiltless Cream of Broccoli Soup

A thick and creamy broccoli soup with sharp cheddar cheese.

  1. 1Place a large saucepan over medium heat. Add butter. When melted, add onion and cook 2 minutes, stirring every so often.
  2. 2Meanwhile, place flour in a medium bowl. While whisking, stream in broth until flour dissolves. Add to pot with milk. Cook another 5-7 minutes, stirring until thickened.
  3. 3Add broccoli, salt and pepper, simmer another 5 minutes. Puree in a blender in batches, pour back into pan over low heat. Add cheese and cook until melted. Serve and enjoy!
