Ingredients:
  • (1/3 cup) canola oil
  • (3/4 cup) packed light brown sugar
  • (1 large) egg
  • (2 tsp.) vanilla extract, divided
  • (1 1/2 cups) whole-wheat pastry flour
  • (1/3 cup) unsweetened cocoa powder
  • (3/4 tsp.) baking powder
  • (3/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (3/4 cup) nonfat milk
  • (1/2 cup) cold water
  • (2 tsp.) unflavored gelatin
  • (1 cup) whipping cream
  • (2/3 cup) nonfat plain yogurt
  • (1/2 cup) confectioners’ sugar

Guilt Free Whoopies

A light vanilla whipped filling sandwiched between two soft chocolate cookies.

Preparation Time

About 45 minutes (plus 1 hr chilling)

    Instructions

  1. 1With oven racks in the upper and lower third positions, preheat oven to 350°F. Spray 2 large baking sheets with cooking spray.
  2. 2In a large bowl, use an electric mixer on medium to beat together oil, brown sugar, egg and 1 tsp. vanilla. In a separate bowl, combine flour, cocoa, baking powder, baking soda and
    salt.
  3. 3Alternately add dry ingredients and milk to sugar mixture, beating well after each addition. Let stand 15
    minutes.
  4. 4Drop 1 Tbsp. batter onto baking sheets for each cookie. Use the back of a spoon to spread each cooke into a 2 1/2 in. round. Bake 8 minutes. Cool completely.
  5. 5Meanwhile, in a microwave-safe bowl, combine water and gelatin, set aside 1 minute. Microwave on High 20-30 seconds. Set aside to cool 10 minutes.
  6. 6In a medium bowl, use an electric mixer on High to beat together cream, yogurt, confectioners’ sugar and vanilla. Continue to beat while adding gelatin mixture, beat until
    combined.
  7. 7Cover and refrigerate 30 minutes.
  8. 8Before assembling pies, whisk filling until smooth. Flip over half the cookies and top them with 2 Tbsp. filling each. Sandwich with remaining cookies. Refrigerate another 30 minutes and serve.
