  • (1/2 pint) grape tomatoes, halved

Goat Cheese Souffle w/Mixed Greens

A fluffy souffle made with whipped egg whites and soft, tart goat cheese, served with a simple lemon dressed salad.

  1. 1Preheat oven to 400°F.
  2. 2Whisk together egg yolks, chives, salt and pepper in a large bowl, set aside.
  3. 3Use an electric mixer on medium-high to beat the egg whites until they form stiff peaks. Add to yolks, fold to combine. Place a large oven-safe nonstick skillet over medium-low heat.
  4. 4Add butter. When melted, spread around the pan and add the egg mixture. Crumble goat cheese on top and bake 10 minutes, or until edges are golden-brown.
  5. 5Dress the salad greens with olive oil and lemon, serve with tomatoes and a wedge of souffle. Enjoy!
