giant grilled zucchini sandwich
Ingredients:
  • (3 cups) zucchini, diagonally cut into 1/8 in. thick slices
  • (3 slices) red onion, 1/8 in. thick
  • (1) red bell pepper, seeded and cut into 4 pieces
  • (2 Tbsp.) balsamic vinegar
  • (1 tsp.) extra virgin olive oil
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground black pepper
  • (1 lb. loaf) ciabatta, cut in half horizontally
  • (1 cup) gourmet salad greens
  • (5 oz.) fresh mozzarella cheese, sliced
  • (8) fresh basil leaves

Giant Grilled Zucchini Sandwich

Grilled zucchini, onion and bell peppers tossed in balsamic vinegar and piled high on ciabatta bread.

    Instructions

  1. 1Preheat outdoor grill or indoor grill pan to medium-high heat.
  2. 2In a large bowl, toss together zucchini, red onion, bell pepper, balsamic vinegar, olive oil, salt and pepper.
  3. 3Place on grill (use a piece of foil if needed) and cook onion and bell pepper 15 minutes, turning once. Grill zucchini 6 minutes, turning once. Reserve vinegar in bowl.
  4. 4Remove inside of bottom half of bread and fill with grilled vegetables, greens, cheese and basil. Top with vinegar and bread top.
  5. 5Grill sandwich 8 minutes, turning halfway through. Cut into quarters and serve.
