  • (2 heads) garlic, tops cut off
  • (2 tsp.) extra-virgin olive oil, divided
  • Kosher salt and pepper
  • (1 loaf) ciabatta, sliced 1/4 in. thick (14 slices)
  • (1/4 cup) olio nuovo or extra-virgin olive oil



Garlic Olive Oil Toast

Thin ciabatta toast topped with roasted garlic and a drizzle of olive oil.

  1. 1Preheat oven to 400°F.
  2. 2Place each head of garlic on a sheet of foil. Use a pastry brush to brush each one with 1/2 tsp. extra-virgin olive oil. Sprinkle salt and pepper over each one and wrap up the foil. Bake 40 minutes.
  3. 3Open each packet and top heads with 1/2 tsp. extra-virgin olive oil each. Bake another 20 minutes with
    foil open.
  4. 4Once out of oven, increase oven to 450°F. Place bread slices on a baking sheet and bake 6-8 minutes,
    turning once.
  5. 5Meanwhile, squeeze cloves out of heads and mash with a fork. Divide onto toasts and top each one with a drizzle of olive oil, salt and pepper.
