  • (8 oz. package) bow tie (farfalle) pasta
  • (1 tsp.) fresh ginger, peeled and finely chopped
  • (1/3 cup) rice vinegar
  • (1/4 cup) orange juice
  • (1/4 cup) vegetable oil
  • (1 tsp.) toasted sesame oil
  • (1 oz. package) dry onion soup mix
  • (2 tsp.) white sugar
  • (1 clove) garlic, pressed
  • (1/2) cucumber, scored, halved lengthwise, seeded
    and sliced
  • (1/2 cup) red bell pepper, diced
  • (1/2 cup) red onion, coarsely chopped
  • (2) Roma tomatoes, diced
  • (1) carrot, shredded
  • (6 oz. bag) fresh spinach
  • (11 oz. can) mandarin orange segments, drained
  • (2 cups) cooked chicken, diced
  • (1/2 cup) sliced almonds, toasted



Fruity Asian Chicken Bowties

A bowtie pasta salad full of fresh veggies, oranges and chicken in a sesame-orange dressing.

  1. 1Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add pasta and cook 8-10 minutes. Drain, place under cold running water until cooled, drain
  2. 2Meanwhile, in a large bowl, whisk together ginger, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic. Refrigerate until pasta is ready.
  3. 3Toss cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, almonds and cooled pasta with dressing. Serve and enjoy!
