Ingredients:
  • (3 1/2 cups) quick-cooking oats
  • (1 cup) chopped almonds
  • (1) egg, lightly beaten
  • (2/3 cup) butter, melted
  • (1/2 cup) honey
  • (1 tsp.) vanilla extract
  • (1/2 cup) sunflower kernels
  • (1/2 cup) flaked coconut
  • (1/2 cup) dried apples, chopped
  • (1/2 cup) dried cranberries
  • (1/2 cup) packed brown sugar
  • (1/2 tsp.) ground cinnamon

Fruity Almond Oat Bars

Toasted oat and almond bars with sunflower seeds, coconut and dried fruit.

    Instructions

  1. 1Preheat oven to 350°F. Spray a 15x10x1 in. baking pan with cooking spray.
  2. 2Toss together oats and almonds in greased baking pan. Bake 15 minutes, stirring every few minutes.
  3. 3Combine egg, butter, honey and vanilla in a large bowl. Add sunflower kernels, coconut, apples, cranberries, brown sugar, cinnamon and oat mixture, stir to combine.
  4. 4Spray same baking pan again with cooking spray, press mixture into an even layer in pan. Bake 13-18 minutes, or until set. Cool on a wire rack and serve.
