Fruit Filled Crepes

Thin whole-wheat crepes filled with mixed berries and served with a dusting of sweet powdered sugar.

    Instructions

  1. 1In a large bowl, whisk together wheat flour, egg whites, milk, a pinch of salt and oil.
  2. 2Spray a medium skillet with cooking spray and place over medium heat. Add 1/4 cup batter, tilt pan to evenly coat the bottom. Cook about 2 minutes and carefully flip.
  3. 3Spoon 2 Tbsp. berries in the center and cook another 2 minutes. Repeat with remaining batter. Fold over and serve with powdered sugar over the top.
