Ingredients:
  • (1 Tbsp.) butter
  • (1 Tbsp.) light brown sugar
  • (1 cup) rolled oats
  • (1/4 tsp.) cinnamon
  • (1/2 cup) whole-wheat flour
  • (1/2 cup) unsweetened apple juice
  • (1/2 tsp.) vanilla extract
  • (1/2 cup) warm water
  • (1) ripe banana
  • (1/4 cup) dried currants

Chewy baked oat bars with dried currants and flavors of apple and banana.

    Instructions

  1. 1Heat oven to 350°F. Spray an 8×8 in. baking pan with cooking spray.
  2. 2In a small bowl, stir together apple juice, vanilla and water; set aside.
  3. 3Use an electric mixer to cream together butter and sugar until smooth. Add oats, cinnamon and flour, mix
    until combined.
  4. 4Add apple juice mixture, banana and currants, stir to combine. Spread into an even layer in greased pan.
  5. 5Bake about 1 hour, or until golden brown. Cool on a wire rack, then cut into 12 bars. Enjoy!
