Ingredients:
  • (1/3 cup) golden raisins
  • (2 Tbsp.) dry marsala or apple juice
  • (2 3/4 cups) all-purpose flour
  • (1 cup) sugar
  • (1/3 cup) sliced almonds, toasted
  • (2 Tbsp.) crystallized ginger, chopped
  • (1 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) ground cinnamon
  • (1/4 tsp.) salt
  • (2) eggs
  • (1) egg white
  • (1 tsp.) vanilla
  • Grated rind of 1 orange
  • Grated rind of 1 lemon
  • (1 Tbsp.) frozen orange juice concentrate, thawed

Fruit and Nut Biscotti

Crunchy biscotti cookies loaded with raisins marinated in apple juice, toasted almonds and citrus.

    Instructions

  1. 1Preheat oven to 325°F. Spray a baking sheet with cooking spray.
  2. 2In a small bowl, cover raisins with marsala or apple juice, set aside 10 minutes.
  3. 3Meanwhile, mix together flour, sugar, almonds, ginger, baking powder, baking soda, cinnamon and salt.
  4. 4In a separate bowl, whisk together eggs, egg white, vanilla, orange rind, lemon rind and orange juice concentrate. Add raisins. Add to flour mixture, stir to combine.
  5. 5Separate dough into 2 equal parts. On baking sheet, shape each into a 13 in. long by 1 in. thick log, leaving 2 inches inbetween them. Bake 25 minutes, or until firm. Cool on a wire rack 10 minutes.
  6. 6Reduce oven to 300°F. Slice each roll into 18 equal, diagonal slices. Place back on baking sheet and another 20 minutes. Cool on a wire rack and serve.
