Ingredients:
  • (1 cup) Hass avocado, mashed
  • (1 Tbsp.) stone-ground cornmeal
  • (1 Tbsp.) fresh cilantro, finely chopped
  • (1/4 tsp.) ground cumin
  • Pinch of salt
  • (1 Tbsp.) olive oil
  • (1/4 cup) mango chutney

Spiced avocado patties fried in olive oil and served with mango chutney.

    Instructions

  1. 1In a medium bowl, mix together avocado, cornmeal, cilantro, cumin and salt.
  2. 2Place a large, nonstick skillet over medium-high heat. Add oil. When hot, add 4 equal spoonfuls avocado and flatten slightly.
  3. 3Cook 5 minutes, turn over and cook another 2-3 minutes. Top evenly with mango chutney and serve.
