Ingredients:
  • (1 tsp.) finely grated lemon zest
  • (1/3 cup) lemon juice
  • (3 Tbsp.) extra-virgin olive oil
  • (2 Tbsp.) packed fresh oregano, minced
  • (2 Tbsp.) packed fresh sage, minced
  • (2 Tbsp.) fresh chives, minced
  • (1 tsp.) freshly ground pepper
  • (1/2 tsp.) salt
  • (2 15-oz. cans) cannellini beans, rinsed
  • (12) cherry tomatoes, quartered
  • (1 cup) celery, finely diced
  • (24) raw shrimp (21-25 per pound), peeled and deveined

Fresh Citrus Shrimp Platters

Simple grilled shrimp served with a fresh citrus-herb bean and vegetable salad.

    Instructions

  1. 1Preheat outdoor grill or indoor grill pan to medium-high heat.
  2. 2In a large bowl, combine lemon zest, lemon juice, oil, oregano, sage, chives, pepper and salt. Measure out 2 Tbsp. and set aside. Toss beans, tomatoes and celery with remaining dressing.
  3. 3Place 4 shrimp each onto wooden skewers. Dip a small cloth into olive oil and grease the grill rack.
  4. 4Grill shrimp 4 minutes, turning once. Serve with beans and reserved dressing.
