Ingredients:
  • (8 in.) whole wheat flour tortilla
  • (1 Tbsp.) olive oil
  • (1/2) red bell pepper, cut into thin strips
  • (3) egg whites
  • (1 Tbsp.) fresh chives, chopped
  • (1 tsp.) fresh oregano, chopped (or 1/2 tsp. dried)
  • (1 oz.) canadian bacon, cut into thin strips
  • (2 Tbsp.) shredded reduced-fat Italian cheese blend
  • (1 cup) cubed melon or 2 thin wedges

Egg and Bacon Tostada

A crispy whole-wheat tortilla topped with sweet bell pepper, salty bacon and fluffy scrambled egg whites.

    Instructions

  1. 1Preheat the oven to 400°F.
  2. 2Place tortilla on a baking sheet. Spray both sides with cooking spray, bake 6 minutes, or until crispy.
  3. 3Place a small nonstick skillet over medium heat. Add oil. When hot, add bell pepper and cook 5 minutes.
  4. 4Meanwhile, beat together egg whites, chives, oregano and 2 tsp. water. Remove bell pepper from skillet and add eggs. Scramble 2 minutes.
  5. 5Top tortilla with 2/3 each bell pepper and bacon. Top with eggs, rest of the bell pepper and bacon and cheese. Bake another 4 minutes to melt the cheese. Quarter and serve.
