Ingredients:
  • (1/2 cup) whole-wheat pastry flour
  • (1/2 cup) all-purpose flour
  • (1/2 cup) unsweetened cocoa powder, sifted
  • (1/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (3/4 cup) packed light brown sugar
  • (1/2 cup) granulated sugar
  • (6 Tbsp.) cool unsalted butter, cut into chunks
  • (1 large) egg white
  • (1 tsp.) vanilla extract

Easy Chocolate Cookies

These are made with a homemade chocolate dough that is refrigerated for easy, slice and bake cookies.

    Instructions

  1. 1In a medium bowl, whisk together flours, cocoa, baking soda and salt, set aside. In a large bowl, use an electric mixer on medium to beat together sugars and butter for about 5
    minutes.
  2. 2Add egg white and vanilla, beat until combined. Add flour mixture and beat on low until combined.
  3. 3Dust a flat surface with flour and roll the dough into an 8×2 in. long log. Wrap in plastic wrap and refrigerate at least 2 hours.
  4. 4With oven racks in upper and lower third positions, preheat oven to 350°F. Place parchment paper on 2 large
    baking sheets.
  5. 5Slice log into 1/4 in. thick cookies and place 1 inch apart on baking sheet. Bake 10-12 minutes, switching pan positions halfway through. Cool on wire racks and serve.
