Ingredients:
  • (3/4 cup plus 2 Tbsp.) whole-wheat pastry flour
  • (1/2 cup) granulated sugar
  • (1/3 cup) unsweetened cocoa powder
  • (1 tsp.) baking powder
  • (1 tsp.) baking soda
  • (1/4 tsp.) salt
  • 1/2 cup) nonfat buttermilk
  • (1/2 cup) packed light brown sugar
  • (1 large) egg, lightly beaten
  • (2 Tbsp.) canola oil
  • (1 tsp.) vanilla extract
  • (1/2 cup) hot strong black coffee
  • Confectioners’ sugar

Easy Chocolate Cake

An easy chocolate cake made with coffee to really bring out the chocolate flavor.

    Instructions

  1. 1Preheat oven to 350°F. Spray a 9 in. round pan with cooking spray and line the bottom with wax paper. In a large bowl, combine flour, granulated sugar, cocoa, baking powder, baking soda and salt.
  2. 2Use an electric mixer on medium to beat together buttermilk, brown sugar, egg, oil and vanilla to dry ingredients. Add coffee, beat until combined.
  3. 3Pour into pan and bake 30-35 minutes, or until a toothpick comes out clean. Cool 10 minutes, then remove from pan and cool completely. Serve with a dusting of powdered sugar.
