  • (1 lb.) thick chicken breasts, cut into 1 in. pieces
  • (1 large) egg
  • (1/2 tsp.) Dijon mustard
  • (3/4 cup) Panko
  • (3/4 cup) grated Parmesan
  • (1 Tbsp.) salt-free Italian seasoning
  • (1 tsp.) garlic powder
  • (2 cups) jarred pasta sauce
  • (2 cups) whole wheat spaghetti, cooked
  • (8 Tbsp.) part-skim mozzarella cheese, grated



Easy Chicken Parmesan

Baked Parmesan breaded chicken served over whole-wheat spaghetti with tomato sauce and more cheese!

  1. 1Preheat oven to 350°F. Spray a baking sheet with cooking spray.
  2. 2In a large bowl, whisk together egg and mustard. Toss in chicken. Drain off excess, place on a rack to drain completely.
  3. 3In a large ziplock bag, combine panko, Parmesan cheese, Italian seasoning and garlic powder. Shake chicken in bag and place on a baking sheet.
  4. 4Bake 30 minutes, or until lightly browned. Meanwhile, heat pasta sauce according to package directions.
  5. 5Top 1/2 cup spaghetti with 1/4 chicken, 2 Tbsp. cheese and 1/2 cup sauce. Enjoy!
