  • (2 Tbsp.) nonfat dry milk
  • (1 1/2 Tbsp.) cornstarch
  • (1/4 cup) Splenda brown sugar blend
  • (12 oz. can) fat-free evaporated milk
  • (1) “Omega 3 enriched” egg, beaten
  • (1/2 tsp.) vanilla extract
  • Fat-free whipped topping



Easy Butterscotch Pudding

A 10 minute, thick butterscotch pudding served with whipped cream on top.

  1. 1In a small saucepan, whisk together dry milk, cornstarch and sweetener. While whisking, stream in evaporated milk and add egg. Place over medium-high heat and whisk for 5 minutes, until thick.
  2. 2Take off the heat, add vanilla extract. Set aside until room temperature, refrigerate until cooled. Serve each portion
    with a dollop of whipped cream over the top, enjoy!
