Ingredients:
  • (1 1/2 cups) uncooked bulgur or cracked wheat
  • (1 1/2 cups) boiling water
  • (1 cup) dried figs, halved
  • (1 cup) fresh parsley, chopped
  • (1/2 cup) fresh mint, chopped
  • (1/2 cup) sweetened dried cranberries
  • (1/2 cup) lemon juice
  • (2 Tbsp.) olive oil
  • (1/2 tsp.) salt
  • (1/2 tsp.) black pepper
  • (15 1/2 oz. can) chickpeas, drained

Dried Fruit and Chickpea Salad

An easy bulgur salad with figs, dried cranberries, chickpeas and mint.

    Instructions

  1. 1In a large bowl, pour boiling water over bulgur. Cover and set aside 30 minutes.
  2. 2Add figs, parsley, mint, cranberries, lemon juice, olive oil, salt, pepper and chickpeas. Toss to combine cover and refrigerate until cooled. Serve and enjoy!
