  • (1 large) egg, beaten
  • (2 1/4 cups) nonfat or low-fat milk, divided
  • (2/3 cup) sugar, divided
  • (1/8 tsp.) salt
  • (2/3 cup) unsweetened cocoa powder
  • (2 Tbsp.) cornstarch
  • (1 tsp.) vanilla extract

A thick and sweet homemade chocolate pudding.

  1. 1Place a medium saucepan over medium heat. Add 1 1/2 cups milk, 1/3 cup sugar and salt. Bring to a simmer, stirring every few minutes. In a medium bowl, whisk together 1/3 cup sugar, cocoa and cornstarch.
  2. 2Add 3/4 cup milk, whisk to combine. Slowly add hot milk while whisking. Add back to pan and continue to whisk for 3 minutes, until thick. Set aside off heat.
  3. 3Place beaten egg into a medium bowl. Measure out 1 cup of hot milk mixture and add it to the egg while whisking. Pour back into pan and whisk another 2 minutes. Add vanilla, stir
    and serve.
