Ingredients:
  • (1/4 tsp.) salt
  • (1/4 tsp.) fresh-ground pepper
  • (1/4 tsp.) ground cinnamon
  • (1/8 tsp.) freshly grated nutmeg
  • (1/8 tsp.) ground cloves
  • (3 cloves) garlic, finely chopped
  • (3 Tbsp.) extra-hot Dijon mustard
  • (2 Tbsp.) mayonnaise
  • (11 oz.) pork tenderloin
  • (1 Tbsp.) olive oil
  • (16 slices) round, soft French or Italian bread, lightly toasted
  • (4 oz.) Swiss cheese, thinly sliced
  • (4 slices) dill pickle, sandwich style, cut in half
  • (4 oz.) Black Forest ham, thinly sliced

Cubans on Toast

Thinly sliced dijon pork tenderloin sandwiched between crisp toasts with a spiced mayo, Swiss cheese, dill pickles and Black Forest ham.

    Instructions

  1. 1In a small bowl, combine salt, pepper, cinnamon, nutmeg, cloves, garlic and mustard. Place 1 1/2 Tbsp. in a separate bowl, add mayonnaise and stir to combine, set aside.
  2. 2In a small roasting pan, cover tenderloin with remaining mustard. Cover and refrigerate 25 minutes.
  3. 3Preheat oven to 450°F. Let tenderloin sit at room temperature 10 minutes, then bake 20-25 minutes, turning after 10 minutes. Set aside to rest 15 minutes, then thinly slice.
  4. 4Place 1 Tbsp. olive oil in a small bowl, use a pastry brush to brush the baking pan and a sheet of foil with the oil.
  5. 5Top each piece of toast with 1/2 tsp. mayonnaise mixture. Top half of toasts evenly with pork, Swiss, pickles and ham. Sandwich together, place on pan and cover with foil, oil
    side down.
  6. 6Bake 10 minutes to melt the cheese and serve.
