Ingredients:
  • (1/2 cup) all-purpose flour
  • (1/4 tsp.) salt
  • (1 large) egg
  • (2/3 cup) skim milk
  • (2 cups) strawberries, rinsed and
    quartered

Crepes w/Strawberries

Light, fluffy crepes topped with fresh strawberries.

    Instructions

  1. 1Spray a medium skillet with cooking spray and place over medium-high heat.
  2. 2In a medium bowl, combine
    flour and salt. Using your hand, make a small hole in the center of the mixture, then
    crack the egg into it.
  3. 3Whisk together while slowly adding milk. Let sit for 5 minutes.
  4. 4By this time, your pan
    should be hot. Scoop 1/2 cup of batter into pan at a time, swirling the pan around to coat.
  5. 5Cook 1 minute, then gently lift the sides of the crepe with a spatula and flip. Cook another 30 seconds.
  6. 6Fold over and serve
    w/strawberries. Enjoy!
