Ingredients:
  • (1 1/2 lbs.) extra large shrimp, rinsed
  • (1/3 cup) cornstarch
  • (1/2 tsp.) ground red pepper
  • (1 Tbsp.) honey
  • (1 Tbsp.) freshly squeezed lime juice
  • (1/3 cup) egg whites
  • (3/4 cup) coconut
  • Cooking spray
  • Dash of salt

Coconut Lime Shrimp

This healthy, baked shrimp is bursting with tropical flavors of lime and coconut.

    Instructions

  1. 1Preheat the oven to 425°F. Spray a large baking sheet with cooking spray.
  2. 2In a medium bowl, mix cornstarch, salt and pepper. Heat the honey in a microwave safe bowl for 30-45 seconds.
  3. 3Stir the lime juice into the warm honey, then slowly add the egg whites and mix. In a flat baking dish, spread the coconut out in a thin layer.
  4. 4Using one hand for each, dip each shrimp first into the cornstarch mix then in the egg white mix. Using your dry hand, roll the shrimp in the coconut then place on the greased baking sheet.
  5. 5Bake 10-15 minutes or until golden brown. Enjoy!
