Ingredients:
  • (1 lb.) ground beef
  • (4 Tbsp.) onion, chopped and divided
  • (3 Tbsp.) sweet red pepper, chopped and divided
  • (2 Tbsp.) green pepper, chopped and divided
  • (10 3/4 oz. can) condensed nacho cheese soup,
    undiluted
  • (1/2 cup) salsa
  • (4 Tbsp.) sliced ripe olives, divided
  • (4 Tbsp.) sliced pimiento-stuffed olives, divided
  • (2 Tbsp.) green chilies, chopped
  • (1 tsp.) jalapeno pepper, seeded and chopped
  • (1/4 tsp.) dried oregano
  • (1/4 tsp.) pepper
  • (1/4 cup) shredded cheddar cheese
  • (2 Tbsp.) sour cream
  • (2-3 tsp.) fresh parsley, minced
  • Tortilla chips

Chunky Nacho Dip

A warm cheese, beef and vegetable dip layered with more shredded cheese, sour cream and olives.

    Instructions

  1. 1Place a large skillet over medium heat. Add beef, 3 Tbsp. onion, 2 Tbsp. red pepper and 1 Tbsp. green pepper. Cook until meat is browned, stirring occasionally. Drain.
  2. 2Add soup, salsa, 3 Tbsp. of each type of olives, chilies, jalapeno, oregano and pepper. Bring to a boil, then simmer over medium-low heat for 5 minutes.
  3. 3Pour into a large serving dish. Add layers of cheese, sour cream, parsley, onion, peppers and olives. Enjoy with tortilla chips.*
