  • (2) eggs
  • (1/2 cup) water
  • (2 tsp.) vanilla extract

  • (1/2 cup) nonfat dry milk powder
  • (3 Tbsp.) baking cocoa
  • (1 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) salt
  • (2 medium) ripe bananas, mashed
  • (3/4 tsp.) confectioners’ sugar

  1. 1Preheat oven to 375°F. Spray a 9 in. square baking pan with cooking spray.
  2. 2Use an electric mixer to cream together butter, sugar substitute and brown sugar until fluffy. Add 1 egg at a time, beating after each addition. Beat in water and vanilla.
  3. 3In a separate bowl, whisk together flour, dry milk powder, cocoa, baking powder, baking soda and salt. Add in several batches to butter mixture, beat to combine.
  4. 4Mix in bananas by hand. Pour into prepared baking dish.
  5. 5Bake 23-28 minutes, or until a toothpick comes out clean. Cool on a wire rack. Serve with a dusting of confectioners’ sugar.
