Ingredients:
  • (1 3/4 cups) whole grain pastry flour
  • (1 1/2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1 1/2 tsp.) ground cinnamon
  • (1/4 tsp.) salt
  • (2) eggs
  • (1/3 cup) packed brown sugar
  • (1/2 cup) plain yogurt
  • (1/3 cup) canola oil
  • (2 tsp.) vanilla extract
  • (1 1/2 cups) shredded zucchini
  • (3/4 cup) mini semisweet chocolate chips

Chocolate Chip Zucchini Bread

A moist, sweet bread made with fresh shredded zucchini and semisweet chocolate chips.

    Instructions

  1. 1Preheat oven to 350°F. Place a sheet of foil in an 8×8 in. baking pan, letting it hang over the edges. Spray foil with cooking spray.
  2. 2Mix together flour, baking powder, baking soda, cinnamon and salt in a large bowl, set aside.
  3. 3In a separate bowl, whisk together eggs, brown sugar, yogurt, oil and vanilla. Add zucchini and chocolate chips, stir to combine. Add to flour mixture, stir until blended.
  4. 4Pour into pan and bake 40 minutes, or until a toothpick comes out clean. Let cool 30 minutes in pan,
    remove from pan using foil. Cool completely and serve.
