  • (3 large) egg whites, at room temperature
  • (1/4 tsp.) cream of tartar
  • (3/4 cup) sugar
  • (1/2 tsp.) vanilla extract
  • (4 Tbsp.) unsweetened cocoa powder, divided
  • (1 Tbsp.) ground cinnamon
  • (1/2 cup) mini chocolate chips



Chocolate Chip Meringues

Light and airy chocolate meringues with cinnamon and mini chocolate chips.

  1. 1Place egg whites and cream of tartar into a medium bowl. Use an electric mixer on medium-high to beat until it forms soft peaks.
  2. 2Add sugar 1 Tbsp. at a time, beating after each addition, until stiff peaks form. Beat in vanilla. Add 3 Tbsp. cocoa powder, cinnamon and chocolate chips, fold to combine.
  3. 3With racks in upper and lower positions, preheat oven to 200°F. Place parchment paper on 2 large baking sheets.
  4. 4Place meringue into a quart sized ziplock bag. Seal bag 3/4 of the way closed. Snip one corner and pipe 1 1/2 in. cookies onto the baking sheets.
  5. 5Bake 1 1/2 hours, or until crisp and dry. Cool on wire racks 15 minutes. Sprinkle 1 Tbsp. cocoa powder over meringues and serve.
