Ingredients:
  • (3 oz.) linguine
  • (1 lb.) green beans, trimmed
  • (2 cups) celery, diagonally sliced
  • (1 cup) red bell pepper, thinly sliced
  • (1/2 cup) green onions, cut into 1/2 in. slices
  • (1/3 cup) fresh cilantro, chopped
  • (1/4 cup) rice wine vinegar
  • (1/4 cup) low-sodium soy sauce
  • (2 Tbsp.) dark sesame oil
  • (2 tsp.) grated peeled fresh ginger
  • (1/2 tsp.) sugar
  • (1/4 tsp.) freshly ground black pepper
  • (3 cloves) garlic, minced
  • (1) red jalapeño pepper, seeded and finely chopped

Chilled Green Bean Linguine Salad

This pasta salad is the perfect combination between hot and cool with red jalapeño peppers and fresh veggies.

    Instructions

  1. 1Cook pasta according to package directions. At 3 minutes left, add beans and cook with pasta. Drain and place under cold running water until cooled.
  2. 2In a large bowl, whisk together vinegar, soy sauce, sesame oil, ginger, sugar, pepper, garlic and red jalapeño pepper. Add cooled pasta, celery, bell pepper, onion and
    cilantro, toss.
  3. 3Cover and refrigerate until ready
    to serve.
