  • (8 strips) Applewood smoked bacon
  • (1 lb.) boneless, skinless chicken breast
  • (1 tsp.) sea salt
  • (1/2 tsp.) ground black pepper
  • (1 1/2 tsp.) wasabi powder
  • (1 tsp.) lemon juice
  • (1/2 cup) mayonnaise
  • (12 slices) thin pullman bread, toasted
  • (1 bunch) watercress
  • (1/4) red onion, sliced into rings
  • (1 medium) beefsteak tomato, cut into 8 slices



Chicken Club Sandwiches

  1. 1Preheat oven to 350°F. Place a wire rack on a baking sheet. Place bacon on rack side by side. Bake 25 minutes, turning after 20 minutes. Set aside on paper towel to cool and drain.
  2. 2Meanwhile, spray a baking pan with cooking spray. Season both sides of chicken with salt and pepper. Place in pan and bake 25 minutes, turning after 10 minutes. Set aside to rest 15 minutes.
  3. 3In a small bowl, combine wasabi powder and lemon juice into a paste. Add mayonnaise, stir to combine. Slice chicken into 1/2 in. thick strips. Cut tomatoes.
  4. 4Spread wasabi mayonnaise onto each slice of bread. Top evenly with watercress, chicken slices, red onion, another slice of toast, tomato and bacon.
  5. 5Sandwich with another toast, quarter and serve each quarter with a toothpick in the center.
