Ingredients:
  • (1 1/2 cups) cooked chicken breast, cubed
  • (1 1/2 cups) picante sauce, divided
  • (1/2 cup) shredded reduced-fat cheddar cheese
  • (2/3 cup) green onions, chopped and divided
  • (1 tsp.) ground cumin
  • (1 tsp.) dried oregano
  • (6) flour tortillas (8 in. diameter), warmed
  • (1 Tbsp.) butter, melted

Chicken Chimis

Flour tortillas stuffed with a spicy chicken, vegetable and cheese filling and baked until crispy.

    Instructions

  1. 1Preheat oven to 375°F. Spray a 15x10x1 in. baking pan with cooking spray.
  2. 2Mix together chicken, 3/4 cup picante sauce, cheese, 1/4 cup onions, cumin and oregano in a small bowl. Top each tortilla with 1/2 cup mixture, fold in sides and roll up.
  3. 3Place in greased baking dish seam-side down. Use a pastry brush to brush the tops with melted butter.
  4. 4Bake 20-25 minutes, or until heated. Serve with picante sauce and onions.
