Ingredients:
  • (6 oz.) whole-wheat angel hair pasta
  • (1/3 cup) all-purpose flour, divided
  • (2 cups) reduced-sodium chicken broth
  • (1/2 tsp.) salt, divided
  • (1/4 tsp.) freshly ground pepper
  • (4) chicken cutlets, trimmed (1 lb. total)
  • (3 tsp.) extra-virgin olive oil, divided
  • (10 oz. package) mushrooms, sliced
  • (3 large cloves) garlic, minced
  • (1/2 cup) white wine
  • (2 Tbsp.) lemon juice
  • (1/4 cup) fresh parsley, chopped
  • (2 Tbsp.) capers, rinsed
  • (2 tsp.) butter

Chicken and Mushroom Pasta

Whole-wheat angel hair pasta with crispy chicken and mushrooms in a white wine butter sauce.

    Instructions

  1. 1Fill a large pot with 2 quarts cold water. When boiling, add pasta and cook 4-6 minutes or according to package directions. Drain and rinse until cooled, set aside.
  2. 2While pasta is cooking, whisk together 5 tsp. flour and broth. Set out a shallow dish and fill it with the rest of the flour. Place a large nonstick skillet over medium heat. Add 2 tsp. oil.
  3. 3Season both sides of chicken with 1/2 tsp. salt and pepper, then coat both sides with flour. Cook 4-6 minutes, turning once. Put on a plate with a foil tent.
  4. 4Place pan back over medium-high heat, add 1 tsp. oil. When hot, add mushrooms and cook 5 minutes, stirring every few minutes. Remove from pan and set aside.
  5. 5Add garlic and wine to pan, cook 1-2 minutes, then add reserved broth mixture, lemon juice and 1/4 tsp. salt. Simmer about 5 minutes, or until thickened.
  6. 6Add parsely, capers, butter and reserved mushrooms, stir to combine. Set aside 1/2 cup sauce. Add pasta to pan, toss. Serve with chicken and reserved sauce, enjoy!
