  • (1 3/4 cups) all-purpose flour
  • (1 3/4 tsp.) pumpkin pie spice
  • (1/2 tsp.) salt
  • (1/2 tsp.) baking soda
  • (1/4 cup) butter, softened
  • (6 oz.) reduced-fat cream cheese, softened
  • (1 1/2 cups) firmly packed dark brown sugar
  • (1/2 cup) egg substitute
  • (1 tsp.) vanilla extract
  • (3 cups) uncooked regular oats
  • (3/4 cup) dried cherries
  • (1/2 cup) chopped pecans



Cherry Pecan Oatmeal Cookies

Chewy and moist oatmeal cookies loaded with dried cherries and chopped pecans.

  1. 1Preheat oven to 350°F. Spray 2 baking sheets with cooking spray.
  2. 2In a small bowl, combine flour, pumpkin pie spice, salt and baking soda; set aside.
  3. 3Use an electric mixer on medium to beat together butter, cream cheese and sugar. Add egg substitute and vanilla, beat until combined.
  4. 4Add flour mixture in batches, beating on low after each addition. Add oats and dried cherries, stir by hand
    to combine.
  5. 5Drop by rounded tablespoonfuls onto greased baking sheets. Use a sheet of waxed paper to flatten each cookie, then top each one with 1/2 tsp. pecans.
  6. 6Bake 13-14 minutes, or until a toothpick comes out clean. Cool on wire racks and serve.
