Ingredients:
  • (4 oz.) multigrain elbow macaroni
  • (3 Tbsp.) Panko bread crumbs
  • (4 Tbsp.) olive oil, divided
  • (2 Tbsp.) all-purpose flour
  • (1/2 tsp.) paprika
  • (1/2 tsp.) salt
  • (1/8 tsp.) ground black pepper
  • (2 cups) fat-free milk
  • (1/2 cup) shredded reduced-fat Cheddar cheese

Cheesy Breadcrumb Mac

Multigrain elbow macaroni in a thick and creamy cheddar sauce with a crispy Panko topping.

    Instructions

  1. 1Preheat the oven to 350°F. Spray an 8 in. square baking dish with cooking spray.
  2. 2Fill a medium pot with 1 quart cold water and place over High heat. When boiling, add macaroni and cook according to package. Drain, place under cold running water until cooled. Drain again.
  3. 3In a small bowl, use a fork to mix together bread crumbs and 2 tsp. oil.
  4. 4Place a large saucepan over medium-high heat. Add 3 Tbsp. plus 1 tsp. oil. When hot, add flour, paprika, salt and pepper, whisk until smooth.
  5. 5While whisking, slowly add milk. Continue to whisk for 5 minutes, or until thick. Take off heat, add cheese and stir to melt. Toss with macaroni, transfer to baking dish. Top with bread crumbs.
  6. 6Bake 15 minutes, or until golden brown. Let cool 10 minutes and serve.
