  • (1 stick) unsalted room-temperature butter
  • (1 cup) packed light brown sugar
  • (1 large) egg, beaten
  • (1/2 cup) natural crunchy peanut butter
  • (1 tsp.) baking powder
  • (1/2 tsp.) salt
  • (1 1/2 cups) all purpose flour
  • (1/3 cup) coarse brown sugar crystals



Brown Sugar Peanut Butter Cookies

Moist but crunchy peanut butter cookies sprinkled with brown sugar crystals.

  1. 1Use an electric mixer to cream together butter and brown sugar. Beat in egg. Add peanut butter in 2 batches, beating after each addition. Add baking powder, salt and half the flour, beat on low to combine.
  2. 2Add rest of flour and beat until combined. Cover and refrigerate 1 hour.
  3. 3Preheat oven to 350°F. Roll 1/4 cup dough at a time into balls and place on an ungreased baking sheet. Use a fork to crisscross each cookie and top with brown-sugar
  4. 4Bake 18-20 minutes, or until light brown. Cool on wire racks and serve.
