  • (1/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (3/4 cup) granulated sugar
  • (6 Tbsp.) butter, softened
  • (1 tsp.) vanilla extract
  • (1 large) whole egg
  • (1 large) egg white
  • (1 1/3 cups) low-fat buttermilk
  • (2 cups) fresh blueberries
  • (1 Tbsp.) turbinado sugar



Berry Blue Breakfast Cake

Classic white cake with blueberries in the center and a crunchy turbinado sugar topping.

  1. 1Preheat oven to 350°F. Spray a 9 in. round baking pan with cooking spray.
  2. 2In a small bowl, combine flour, baking powder, baking soda and salt, set aside.
  3. 3Cream together butter and granulated sugar with an electric mixer. Add vanilla, egg and egg white, beat until combined.
  4. 4Add flour mixture, beat, then buttermilk and beat. Repeat until all combined, ending with flour.
  5. 5Add half of batter to pan, top with 1 cup blueberries then remaining batter. Sprinkle 1 Tbsp. turbinado sugar evenly on top.
  6. 6Bake 50 minutes or until toothpick comes out clean. Cool on wire rack for 10 minutes in pan, then remove from pan and let rest until completely cool. Serve and enjoy!
