bell pepper mushroom fajitas
Ingredients:
  • (2 medium) red bell peppers, cut into strips
  • (1 1/2 cups) fresh mushrooms, sliced
  • (1 small) onion, sliced
  • (1 Tbsp.) olive oil
  • (1/2 tsp.) curry powder
  • (1/2 tsp.) chili powder
  • (1/4 tsp.) cumin
  • (4) flour tortillas
  • Sour Cream (optional- can use vegan non-dairy sour cream)

Bell Pepper and Mushroom Fajitas

Red bell peppers and sliced mushrooms cooked in warm spices and served in warm flour tortillas.

    Instructions

  1. 1Place a large skillet over medium-high heat. Add oil. When hot, add peppers, mushrooms and onion, saute 3-5 minutes, stirring frequently.
  2. 2Add curry powder, chili powder and cumin, stir it combine, cook another 2 minutes.
  3. 3Warm tortillas in microwave according to package directions. Assemble fajitas by topping each tortilla with about 1/4 cup vegetables. Top with 1 Tbsp. sour cream, if desired, and serve.
