Ingredients:
  • (4 medium) sweet potatoes
  • (15 oz. can) black beans, rinsed
  • (2 medium) tomatoes, diced
  • (1 Tbsp.) extra-virgin olive oil
  • (1 tsp.) ground cumin
  • (1 tsp.) ground coriander
  • (3/4 tsp.) salt
  • (1/4 cup) reduced-fat sour cream
  • (1/4 cup) fresh cilantro, chopped

Bean Stuffed Sweet Potatoes

Warm sweet potatoes stuffed with spiced black beans and served with sour cream and fresh chopped cilantro.

    Instructions

  1. 1Place potatoes on a microwave-safe plate. Use a fork to prick potatoes and microwave on High 12-15 minutes.
  2. 2Place a small saucepan over medium heat. Add beans, tomatoes, oil, cumin, coriander and salt, stir and cook 2-3 minutes.
  3. 3Stuff each potato with beans, top with sour cream and cilantro. Enjoy!
