Ingredients:
  • (15 oz. can) black beans, rinsed
  • (1/2 cup) pepper Jack cheese, shredded
  • (1/2 cup) prepared fresh salsa, divided
  • (4) whole-wheat tortillas (8 in. diameter)
  • (2 tsp.) canola oil, divided
  • (1) ripe avocado, diced

Bean and Cheese Quesadillas

Black beans and pepper Jack cheese folded in a whole-wheat tortilla and cooked until crispy.

    Instructions

  1. 1Place a large nonstick skillet over medium heat. Add 1 tsp. oil.
  2. 2In a medium bowl, mix together beans, cheese and 1/4 cup salsa. Top half of each tortilla with 1/2 cup filling. Fold over and press.
  3. 3Cook 2 quesadillas at a time for 1-2 minutes per side. Repeat with remaining ingredients.
  4. 4Serve with avocado and salsa, enjoy!
