Ingredients:
  • (1 Tbsp.) olive oil
  • (1 small) onion, chopped
  • (1/2) green bell pepper, chopped
  • (1/2) jalapeno pepper, finely chopped
  • (2 cloves) garlic, minced
  • (1 tsp.) chili powder
  • (1 tsp.) ground cumin
  • (1 tsp.) dried oregano
  • (12 oz.) ground chicken breast
  • (1/2 cup) ketchup
  • (1 Tbsp.) packed dark brown sugar
  • (1/2 cup) unsalted dryroasted peanuts, coarsely chopped
  • (4) hamburger rolls

BBQ Peanut Chicken Sloppies

A different spin on sloppy joes, these chicken sloppies are sweet and spicy in a homemade peanut BBQ sauce.

    Instructions

  1. 1Place a large, nonstick skillet over medium-high heat. Add oil. When hot, add onion, bell pepper and jalapeno. Cook 4-5 minutes, stirring every so often. Add garlic, cook another minute.
  2. 2Add chili powder, cumin and oregano, stir to combine. Add chicken and cook 3-4 minutes, breaking it up with a wooden spoon.
  3. 3Add ketchup and sugar, cook 2-3 minutes, stirring until thick. Add peanuts, cook another minute.
  4. 4Top each roll with filling and serve.
