Ingredients:
  • (1 cup) nonfat vanilla yogurt
  • (1 1/2 cups) apple cider
  • (2) apples, peeled and sliced
  • (1) pear, firm but ripe, peeled and sliced
  • (1 1/2 cups) pitted prunes
  • (1) cinnamon stick
  • (1 tsp.) freshly grated lemon zest
  • (2 Tbsp.) lemon juice
  • (10 slices) firm white sandwich bread, crusts trimmed and halved diagonally
  • (2 large) eggs
  • (2/3 cup) low-fat milk
  • (1 tsp.) vanilla extract
  • (2 Tbsp.) sugar
  • (1/2 tsp.) ground cinnamon

Baked French Toast w/Fruit Compote

Firm white bread nestled in an apple cider compote and baked with a cinnamon sugar crust.

    Instructions

  1. 1Preheat oven to 400°F. Place out a 2 quart baking dish.
  2. 2Place a coffee filter in a sieve and place the sieve over a bowl. Add yogurt, cover and set aside in refrigerator to drain, up to 1 hour.
  3. 3Place a medium saucepan over medium heat. Add cider, apples, pear, prunes, cinnamon stick, lemon zest and lemon juice.
  4. 4Bring to a simmer, stirring every few minutes. Remove cinnamon stick and pour into baking dish.
  5. 5Whisk together eggs, milk and vanilla in a shallow dish or bowl. Coat each slice of bread with egg and place into baking dish, overlapping.
  6. 6In a small bowl, mix together sugar and cinnamon, sprinkle evenly over bread. Bake 20-25 minutes, or until golden brown. Serve with drained yogurt.
