Ingredients:
  • (4) eggs
  • (4 Tbsp.) fat-free milk, divided
  • (2 Tbsp.) shredded smoked cheddar cheese
  • 2 tsp.) fresh parsley, minced
  • (1/4 tsp.) salt
  • (1/8 tsp.) pepper
  • (2 strips) bacon

Baked Bacon and Eggs

Baked eggs are topped with smoked cheddar cheese and finished with crispy bacon.

    Instructions

  1. 1Preheat oven to 325°F. Spray four 4 oz. ramekins with cooking spray, place on a baking sheet.
  2. 2Fill each ramekin with 1 egg and 1 Tbsp. milk. In a small bowl, combine cheese, parsley, salt and pepper, divide evenly between dishes.
  3. 3Bake 12-15 minutes, or until egg whites are set. Meanwhile, place a small skillet over medium heat. Add bacon, cook until crisp. Drain on paper towels.
  4. 4Serve each egg dish with crumbled bacon over the top. Enjoy!
