  • (1 cup) egg substitute
  • (6) whole wheat tortillas (8 in. diameter)
  • (1 cup) shredded reduced-fat cheddar cheese
  • (3 strips) turkey bacon, diced and cooked
  • (6 Tbsp.) salsa
  • (6 Tbsp.) fat-free sour cream

Fluffy scrambled eggs, turkey bacon and cheddar cheese stuffed between two flour tortillas.

    Instructions

  1. 1Spray a large skillet with cooking spray and place over medium heat.
  2. 2Whisk together eggs and egg substitute in a small bowl. Cook in skillet until set, stirring often.
  3. 3Spray another large, nonstick skillet with cooking spray and place over medium heat.
  4. 4Place 1 tortilla in skillet, top with 1/3 cup cheese, 2 Tbsp. bacon, 1 cup eggs and another tortilla. Cook 4-6 minutes, flipping halfway through.
  5. 5Cut each quesadilla into 6 wedges. Top with salsa and sour cream and serve.
