  • (1) strip turkey bacon, chopped
  • (1/4 cup) onion, chopped
  • (2 Tbsp.) seeded fresh tomato, chopped
  • (1) whole wheat flour tortilla
  • (1/4 cup) finely shredded 75% Light Cheddar Cheese
  • (2 tsp.) red taco sauce (optional)



Bacon Breakfast Burrito

A tasty breakfast burrito made with egg whites, turkey bacon and fresh veggies for a healthier twist.

  1. 1Lightly spray a mirowave safe bowl with cooking spray. Crack the eggs into the bowl, set aside.
  2. 2Heat a medium skillet over medium heat and spray with cooking spray. Add the bacon. Cook, stirring occasionally, for about 2 minutes. Add the onion.
  3. 3Cook for 1 to 2 minutes, or until the bacon is crisp. Add the tomato. Cook for another minute or until just heated. Set aside in a small bowl.
  4. 4Heat the tortilla in the skillet for thirty seconds on each side, set aside. Place the egg whites in the microwave for thirty seconds at a time, repeat until they are slightly runny on top.
  5. 5Break them into pieces with a fork, then combine them with the bacon mix. Sprinkle cheese onto the warm tortilla, then place the mix over the cheese.
  6. 6Fold the bottom of the burrito up and the sides over, serve with taco sauce if desired.
