Ingredients:
  • (2 cups) whole-wheat flour
  • (1 cup) all-purpose flour
  • (1 Tbsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) freshly ground pepper
  • (1/4 tsp.) salt
  • (2) eggs
  • (1 1/3 cups) buttermilk
  • (3 Tbsp.) extra-virgin olive oil
  • (2 Tbsp.) butter, melted
  • (1 cup) scallions, thinly sliced
  • (3/4 cup) Canadian bacon, diced
  • (1/2 cup) grated Cheddar cheese
  • (1/2 cup) red bell pepper, finely diced

Bacon and Cheese Muffins

These muffins are anything but sweet! Made with savory Canadian bacon, cheddar cheese, scallions and red bell pepper.

    Instructions

  1. 1Preheat oven to 400°F. Spray a standard muffin pan with cooking spray.
  2. 2In a large bowl, mix together whole-wheat flour, all-purpose flour, baking powder, baking soda, pepper and salt. Use your hand to form a hole in the center, set aside.
  3. 3In a medium bowl, whisk together eggs, buttermilk, oil and butter. Add scallions, bacon, cheese and bell pepper, fold to combine. Pour into the hole you created and stir until combined.
  4. 4Distribute batter evenly between muffin cups and bake 20-22 minutes. Cool 5 minutes and serve.
