Ingredients:
  • (1/2 cup) plain fat-free yogurt
  • (1/4 cup) reduced-fat mayonnaise
  • (2 Tbsp.) fresh flat-leaf parsley, chopped
  • (3 Tbsp.) green onions, chopped
  • (1 Tbsp.) fresh chives, chopped
  • (3 Tbsp.) white wine vinegar
  • (2 tsp.) anchovy paste
  • (1 tsp.) chopped fresh tarragon
  • (1/4 tsp.) freshly ground black pepper
  • (1/8 tsp.) salt
  • (1 clove) garlic, minced
  • (8 cups) romaine lettuce, torn
  • (1 cup) watercress, trimmed
  • (1 1/2 cups) cooked chicken breast, chopped
  • (2) tomatoes, each cut into 8 wedges
  • (2 large) eggs, hard-cooked, each cut into 4 wedges
  • (1/2 cup) avocado, diced and peeled
  • (1/4 cup) crumbled blue cheese

    Instructions

  1. 1Process first 11 ingredients in a blender until smooth. Pour into a bowl and refrigerate until ready to use.
  2. 2In a large bowl, combine lettuce and watercress. Top each 2 cup serving with 6 Tbsp. chicken, 4 tomato wedges, 2 egg wedges, 2 Tbsp. avocado and 1 Tbsp. cheese. Toss with 1/4 cup dressing and enjoy!
