  • (2 cups) all-purpose flour
  • (1/2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) ground cinnamon
  • (1/4 tsp.) ground allspice
  • (1/4 tsp.) salt
  • (1/2 cup) butter or margarine, softened
  • (1/2 cup) granulated sugar
  • (1/4 cup) packed brown sugar
  • (1 large) egg
  • (1 cup) unsweetened applesauce
  • (1 tsp.) vanilla extract
  • (1 medium) Granny Smith apple, finely chopped
  • (1 cup) dark raisins
  • (1 cup) walnuts, coarsely chopped
  • (1 cup) confectioners’ sugar
  • (2 Tbsp.) fresh lemon juice



Applesauce Cookies w/Lemon Sugar Glaze

Applesauce takes the place of oil in these chunky apple and raisin cookies with a lemon icing.

  1. 1Preheat oven to 375°F. Spray 2 large cookie sheets with cooking spray.
  2. 2In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, allspice and salt.
  3. 3Use an electric mixer on medium to beat together butter and sugars. Add eggs, applesauce and vanilla, beat on low to combine. Beat in dry ingredients. Add apple, raisins and walnuts, stir by hand to combine.
  4. 4Drop by rounded tablespoonfuls onto baking sheets, leaving 1 in. in-between each cookie. Bake on separate oven racks for 20-22 minutes, switching positions halfway through. Cool on wire racks.
  5. 5Meanwhile, whisk together confectioners’ sugar and lemon juice. Brush over each cookie. Cool and serve.
